Because let’s face it… you come for the apple, but you stay for the crisp. So, when it comes to this a la mode classic, I double the crisp. I made a batch for girls night this weekend and it was a hit, especially among my preggo friends!

2 pounds Honeycrisp apples, thinly sliced (I skip the peeling. It saves time and no one notices. Also if you don’t know what pounds means in apple lingo, it’s about 6 medium apples or 8 smaller ones.)

1/4 cup orange juice

1/4 cup granulated sugar

1/4 cup brown sugar

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1 1/2 cups flour

3/4 cup granulated sugar

3/4 cup light brown sugar, packed

1/2 teaspoon salt

1 1/2 cup rolled oats (not instant)

3/4 pound (1 1/2 sticks) cold unsalted butter , diced

Preheat the oven to 350 degrees.

Place the apple slices in a large bowl. Add the orange juice, 1/4 cup sugar, 1/4 cup brown sugar, cinnamon and nutmeg. Mix.

Make the crispy crisp by mixing and mushing together the flour, 3/4 cup sugar, 3/4 cup brown sugar, salt, oats and butter cubes. I use my hands. It’s just easier.

Add the apples to the pan and sprinkle the crisp topping on top.

Bake for 35-45 minutes, or until golden brown.

Add a scoop of ice cream! (duh) We like Caramel Delight in our house, but vanilla bean is always good too.
