This dish is great for a quick weeknight dinner. It's healthy and easy to make. Plus, you end up with quite a bit so you're likely to have nice little lunch leftovers the next day. We make it with ground chicken, but ground turkey works well too! 


  • Butternut Squash (I am lazy and buy the packages of pre-cut pieces. but one full DIY peel and cube squash monster will work as well) 
  • 1 Cup Shredded Kale
  • 1 lb Ground Chicken
  • 2 Tbsp Olive Oil
  • Salt & Pepper to taste
  • 1/2 tsp Garlic Powder
  • Dash of chili powder


In a large sauce pan, saute butternut squash cubes in olive oil, with salt & pepper, garlic powder and a little chili powder until soft when pierced with fork (about 10-12 minutes). Remove squash from pan and set aside.

Brown ground chicken (Coat your sauté pan in olive oil first - ground chicken sticks). 

When cooked through, add 1 cup of kalebutternut squash cubes.

Cook until the kale is wilted and all ingredients are mixed well together.
