MY FAVE NON-SALAD SALAD
Occasionally, salads are necessary. But sometimes lettuce just doesn't cut it, nor do I want to cut it. OK, lame lettuce joke OVER. I found this salad recipe inspiration on a celebrity app, and modified it a bit to meet my needs. It is now my absolute FAVORITE. It's filling, protein-packed, personal trainer approved and delicious. This salad would be the result of caprese and cobb having a baby.
- ½ package of cherry tomatoes (rinsed, cut in half)
- 1 avocado, diced
- 2 hard boiled eggs, sliced
- ½ ball of fresh mozzarella, pulled into small chunks OR ciliegine mozzarella balls
Arrange all ingredients on a large plate/shallow salad bowl. Pour about ¼ cup of Olive Oil over everything. Add salt and pepper, stir to lightly toss. Voila!
P.S. If you like hard-boiled eggs, do yourself a favor and order this egg cooker. It makes the PERFECT hard-boiled eggs and they peel like a dream. I don't know about you but I never got it right with the boiling/waiting/cooling traditional method.
