I make my own granola now. Yes, me, the anti-DIY, all-about-convenience, throw-money-at-the-problem ME, I make it homemade and it’s actually easy and cheap! Those who know me know I’m always trying to lose weight and to do so, I eat a high-protein diet and do intermittent fasting. My first meal of the day is greek yogurt with granola, but most granola you can buy in store is ether expensive or packed with sugar. My new vegan co-worker introduced me to a granola recipe he makes at home. I tried it and mastered it. Guys, you gotta try it. It’s sooooo good and so easy.
3 bananas (they should be old and bruisey)
5 cups steel cut granola
handful of sliced almonds
handful of toasted coconut shavings
1/2 teaspoon cinnamon
1 scoops vanilla protein powder
Preheat oven to 325 degrees.
Use a hand mixer (or two forks and some elbow grease) to mash up the bananas in a large bowl until they are in liquid form.
Mix in the cinnamon and protein powder.
Add the oats, almonds and almonds to the banana mixture.
Stir all that stuff together.
Spread it out onto a large baking sheet. Get the clumps of granola as small as possible. You want them little so they get crunchy.
Bake for 25-30 minutes, or until browned and crunchy.
I store in a canister and the batch lasts me 1-2 weeks!
